1.5-2 pounds Boneless, Skinless Chicken Breasts or Thighs
1 10.5-ounce can Cream of Chicken Soup
1 cup Chicken Broth or Water
1 6-ounce box Boxed Dry Stuffing Mix

Instructions

  1. Lightly grease the inside of your slow cooker crock with cooking spray or oil
  2. Lay boneless, skinless chicken breasts or thighs in a single layer at the bottom of the slow cooker
  3. In a medium bowl, whisk together the cream of chicken soup and chicken broth (or water) until smooth
  4. Pour the soup mixture evenly over the chicken pieces in the slow cooker
  5. Evenly sprinkle the dry stuffing mix over the top of the chicken and soup mixture. Do not stir
  6. Secure the lid and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until chicken reaches 165°F (74°C) and shreds easily
  7. Gently fluff the stuffing with a fork and serve immediately

Notes

Do not stir the stuffing during cooking; let it steam and absorb liquid on top.

Avoid lifting the slow cooker lid during cooking to retain heat and moisture.

For extra flavor, season chicken with salt, pepper, and garlic powder before adding to the slow cooker.

Boneless, skinless chicken thighs can be used instead of breasts for more moisture and flavor.

Substitute cream of chicken soup with cream of mushroom, celery, or turkey soup if desired.
