Ingredients
2 cans sweet corn, drained
1 cup shredded cheddar cheese
1 red bell pepper, diced
1/2 red onion, finely chopped
1/2 cup ranch dressing
1/2 cup barbecue sauce
2 cups Fritos, lightly crushed
1/2 tsp chili powder (optional)
Salt and pepper to taste
Instructions
In a large bowl, combine corn, bell pepper, onion, and cheese.
In a small bowl, whisk BBQ sauce and ranch dressing together.
Pour dressing over corn mixture and toss well.
Chill for 30 minutes.
Fold in Fritos just before serving. Garnish as desired.
Notes
For spice, add jalapeños or spicy BBQ sauce.
Don’t mix in Fritos until just before serving to retain crunch.
Use Greek yogurt ranch for a lighter version.
