A zesty, smoky, and creamy twist on a classic, this barbecue ranch frito corn salad is perfect for BBQs, potlucks, and lazy summer nights.

Ingredients

Scale
  • 2 cans sweet corn, drained

  • 1 cup shredded cheddar cheese

  • 1 red bell pepper, diced

  • 1/2 red onion, finely chopped

  • 1/2 cup ranch dressing

  • 1/2 cup barbecue sauce

  • 2 cups Fritos, lightly crushed

  • 1/2 tsp chili powder (optional)

  • Salt and pepper to taste

Instructions

  • In a large bowl, combine corn, bell pepper, onion, and cheese.

  • In a small bowl, whisk BBQ sauce and ranch dressing together.

  • Pour dressing over corn mixture and toss well.

  • Chill for 30 minutes.

 

  • Fold in Fritos just before serving. Garnish as desired.

Notes

  • For spice, add jalapeños or spicy BBQ sauce.

  • Don’t mix in Fritos until just before serving to retain crunch.

 

  • Use Greek yogurt ranch for a lighter version.
