A comforting, hearty classic beef chili made with lean ground beef, fiber-rich beans, and a rich tomato base. This family-friendly recipe relies on pantry staples and is perfect for feeding a crowd or meal prepping.

1 large Yellow Onio
1 large Bell Pepper
4 cloves Garlic
3 tbsp Chili Powder
1 tbsp Cumi
1 tbsp Smoked Paprika
2 tbsp Tomato Paste
2 cans (15 oz) Kidney Beans
28 oz Crushed Tomatoes
1.5 cups Beef Broth
1 tbsp Olive Oil
1 tsp Salt
1 tsp Black Pepper

Instructions

  1. Heat a large Dutch oven over medium-high heat and add a splash of olive oil
  2. Add the diced onions and bell peppers to the pot and sauté until softened and translucent, approximately 5 minutes
  3. Add the ground beef, breaking it into small crumbles with a wooden spoon, and brown thoroughly until no pink remains
  4. Drain any excess fat if necessary
  5. Stir in the minced garlic, chili powder, cumin, and smoked paprika, toasting the spices for one minute
  6. Mix in the tomato paste until the meat and vegetables are evenly coated
  7. Pour in the crushed tomatoes and beef broth, scraping the bottom of the pot to release any browned bits
  8. Add the drained and rinsed beans to the mixture
  9. Bring the chili to a gentle boil, then reduce the heat to low
  10. Cover the pot and simmer for at least 45 minutes, stirring occasionally to prevent sticking
  11. Season with salt and black pepper to taste before serving

Notes

If the chili is too thin, simmer uncovered for the last 15 minutes or mash a few beans against the side of the pot to release starches.
