These high-protein cottage cheese egg bites are fluffy, velvety, and mimic the famous Starbucks version. They are the perfect meal-prep solution for busy mornings, offering a customizable and nutritious breakfast that even picky eaters will love.

1 cup Cottage Cheese
1/2 cup Shredded Cheddar Cheese
1/4 teaspoon Salt
1/8 teaspoon Black Pepper
1/2 cup Spinach
1/4 cup Bacon Bits

Instructions

  1. Preheat your oven to 300°F (150°C)
  2. Place the eggs, cottage cheese, shredded cheese, salt, and pepper into a high-speed blender
  3. Blend the mixture for approximately 30 seconds until it is completely smooth and airy
  4. Thoroughly grease a silicone muffin tin with non-stick spray
  5. Pour the mixture into the muffin cups, filling each one about three-quarters of the way
  6. If using optional mix-ins like spinach or bacon, drop them into the cups and stir gently with a toothpick
  7. Place the muffin tin onto a baking sheet and pour one inch of hot water into the baking sheet to create a water bath
  8. Bake for 25 to 30 minutes until the centers are set
  9. Remove from the oven and allow the egg bites to cool for five minutes before removing them from the silicone mold

Notes

Always use a silicone muffin pan to prevent the egg bites from sticking.

The water bath is essential for achieving a velvety texture and preventing cracks.
