Ingredients

  • 1 cup full-fat cottage cheese

  • ½ cup shredded cheddar cheese (or Gruyère, mozzarella)

  • ½ cup chopped veggies (e.g., spinach, red bell pepper)

  • Salt and pepper to taste

  • Optional: ¼ cup cooked bacon or sausage

  • Optional: 1 tbsp heavy cream (for extra creaminess)

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Lightly grease a silicone muffin pan or use muffin liners.

  3. In a blender or food processor, blend eggs, cottage cheese, and cream (if using) until smooth.

  4. Stir in cheese, vegetables, and optional cooked meat.

  5. Pour mixture evenly into muffin cups (fill about ¾ full).

  6. Bake for 20–25 minutes, or until just set and lightly golden on top.

  7. Cool for 5 minutes before removing from pan. Serve warm or store for meal prep.
