Ingredients
6 large eggs
1 cup full-fat cottage cheese
½ cup shredded cheddar cheese (or Gruyère, mozzarella)
½ cup chopped veggies (e.g., spinach, red bell pepper)
Salt and pepper to taste
Optional: ¼ cup cooked bacon or sausage
Optional: 1 tbsp heavy cream (for extra creaminess)
Instructions
Preheat oven to 350°F (175°C).
Lightly grease a silicone muffin pan or use muffin liners.
In a blender or food processor, blend eggs, cottage cheese, and cream (if using) until smooth.
Stir in cheese, vegetables, and optional cooked meat.
Pour mixture evenly into muffin cups (fill about ¾ full).
Bake for 20–25 minutes, or until just set and lightly golden on top.
Cool for 5 minutes before removing from pan. Serve warm or store for meal prep.
Notes
Use a silicone muffin tray for easy release and even baking.
To freeze, let bites cool completely, wrap individually, and store in a freezer-safe bag.
Reheat in microwave (30–45 sec) or oven (300°F for 5–8 min).
Customize with your favorite mix-ins: herbs, feta, mushrooms, or jalapeños.
Blending the cottage cheese is essential for a smooth, fluffy texture.
