Ingredients
1.5 lbs ground chicken (80–85% lean)
3/4 cup plain breadcrumbs
1 large egg
1/4 cup milk
1/2 cup finely diced onion
2 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika (optional)
1/2 cup ketchup or BBQ sauce (for glaze)
Instructions
Preheat oven to 375°F (190°C). Lightly grease a loaf pan.
In a large bowl, mix ground chicken, breadcrumbs, egg, milk, onion, garlic, salt, pepper, and smoked paprika.
Transfer mixture into the loaf pan and shape evenly.
Spread ketchup or BBQ sauce on top.
Bake for 45–55 minutes until internal temp reaches 165°F.
Let rest for 10 minutes before slicing. Serve warm.
Notes
Don’t overmix the meat mixture to avoid a dense texture.
For extra moisture, soak breadcrumbs in milk before combining.
Add shredded cheese or veggies like spinach for variation.
Freezes well. Slice and wrap individual portions for easy reheating.
