An easy, lean chicken meatloaf recipe that provides a warm, hug-in-a-pan feeling. This budget-friendly, one-bowl wonder is perfect for busy weeknights and is kid-friendly, remaining shockingly juicy without the heavy grease of beef versions.

Ingredients

Scale

2 lbs Ground Chicke
1 cup Breadcrumbs
1 large Egg
1/4 cup Milk
1/2 cup Yellow Onio
3 cloves Garlic
1 tbsp Worcestershire Sauce
1/2 cup Ketchup
1 tsp Dried Oregano
To taste Salt and Pepper

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan or line a baking sheet with parchment paper
  2. Sauté the Aromatics: In a small skillet, sauté diced onions and minced garlic over medium heat until soft and translucent. Let them cool slightly
  3. Mix the Base: In a large mixing bowl, whisk the egg, milk, Worcestershire sauce, and 1/4 cup (half) of the ketchup. Add the breadcrumbs, oregano, salt, pepper, and the cooled onion mixture
  4. Incorporate the Chicken: Add the ground chicken to the bowl. Using your hands or a sturdy spoon, gently mix everything together until just combined. Do not overwork the meat
  5. Shape and Bake: Transfer the mixture to your prepared loaf pan. Smooth the top with a spatula and bake in the center of the oven for 45 minutes
  6. Apply the Glaze: Remove the pan from the oven. Spread the remaining 1/4 cup of ketchup over the top. Return to the oven for another 15 minutes
  7. Check the Temperature: Ensure the internal temperature reaches 165°F (74°C) for safety
  8. Rest: Let the meatloaf rest for at least 10 minutes before slicing to help the juices redistribute

Notes

Use a mix of breast and thigh meat for extra moisture.

For a gluten-free version, use certified gluten-free crumbs or crushed pork rinds.

For a dairy-free version, use almond milk or beef broth.

Avoid overmixing the meat to prevent it from becoming tough and dense.

Leftovers can be stored in an airtight container for up to four days or frozen for up to three months.
