This egg spinach cottage cheese tortilla is the perfect high-protein breakfast wrap. It’s healthy, low-carb, and packed with flavor. Ready in minutes and ideal for meal prep!

Ingredients

  • 2 large eggs

  • ½ cup fresh spinach (chopped)

  • ¼ cup cottage cheese (drained if watery)

  • 1 whole wheat or low-carb tortilla

  • Salt and pepper to taste

  • Olive oil spray (or butter)

Instructions

  1. Heat a nonstick skillet over medium heat. Add olive oil spray and spinach. Sauté for 1–2 minutes until wilted.

  2. In a bowl, whisk eggs, salt, pepper, and cottage cheese.

  3. Pour the egg mixture into the skillet with spinach. Stir continuously until soft-scrambled and cooked through.

  4. Warm your tortilla for 10 seconds.

  5. Spoon egg-spinach-cottage cheese filling into the center and roll into a wrap. Slice and serve.

Notes

  • To reduce moisture, drain the cottage cheese before mixing.

  • Add optional ingredients like tomatoes, feta, or mushrooms.
