1 cup Chicken broth (low sodium)
0.5 cup Heavy cream
1 cup Parmesan cheese, freshly grated

2 tbsp Fresh parsley, chopped
0.25 tsp Red pepper flakes

Instructions

  1. Pat the sirloin steak bites completely dry with paper towels. Season generously with salt and pepper
  2. Bring a large pot of salted water to a rolling boil for your pasta. Add fettuccine (or chosen pasta) and cook according to package directions until al dente
  3. Before draining pasta, reserve about 1 to 1.5 cups of the starchy pasta water. Drain the pasta and set aside
  4. While pasta cooks, heat olive oil in a large skillet or cast-iron pan over medium-high heat until shimmering. Add seasoned steak bites in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes per side for medium-rare, or longer for desired doneness, until a nice brown crust forms. Remove steak bites from the skillet and set aside on a plate
  5. Reduce heat to medium. Add butter to the same skillet, letting it melt. Stir in minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant, being careful not to burn the garlic
  6. Sprinkle in the flour and whisk constantly for 1 minute to create a roux, which helps thicken the sauce
  7. Gradually whisk in the chicken broth, then the heavy cream, stirring until smooth. Bring the mixture to a gentle simmer, allowing it to thicken slightly. Reduce the heat to low
  8. Stir in the freshly grated Parmesan cheese until it fully melts and the sauce becomes wonderfully creamy. Season with additional salt and pepper to taste. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency
  9. Return the cooked steak bites to the skillet with the sauce. Toss gently to coat. Add the drained pasta to the skillet. Use tongs to toss everything together, ensuring the pasta is thoroughly coated with the delicious garlic butter Parmesan sauce. If the pasta absorbs too much liquid, add a little more reserved pasta water until it’s perfectly saucy
