Ingredients
2 turkey tenderloins
¼ cup olive oil
2 tbsp lime juice
1 tbsp soy sauce
2 tsp minced garlic
1 tsp smoked paprika
Salt & pepper to taste
2 ripe mangoes, diced (2 cups)
½ cup red bell pepper, chopped
¼ cup red onion, minced
1 jalapeño, finely chopped
¼ cup fresh cilantro, chopped
2 tbsp lime juice (for salsa)

Instructions
Clean and trim turkey tenderloins.
In a bowl, whisk olive oil, lime juice, soy sauce, garlic, paprika, salt, and pepper. Marinate turkey for 2–4 hours.
Prepare mango salsa by mixing mango, red bell pepper, onion, jalapeño, cilantro, lime juice, and salt. Chill until ready.
Preheat grill to 400°F. Clean and oil grates.
Grill turkey over direct heat for 5–6 minutes per side. Move to indirect heat until internal temp reaches 165°F.
Let rest 5 minutes. Slice and serve with chilled mango salsa.
Notes
Use ripe mangoes for best texture and sweetness.
Salsa can be made 1 day ahead and stored in the fridge.
Turkey can be sliced into medallions before grilling for quicker cooking.
