Ingredients

  • 1 cup rolled oats

  • 1/2 cup natural peanut butter

  • 1/4 cup honey or maple syrup

  • 1/3 cup vanilla protein powder

  • 1/4 cup dark chocolate chips (optional)

  • 1/4 cup chopped almonds or walnuts

  • 1/2 tsp cinnamon

  • 1/2 tsp sea salt

  • 1 tsp vanilla extract


Instructions

  1. In a large mixing bowl, combine oats, protein powder, nuts, cinnamon, and salt.

  2. In a separate bowl, stir together peanut butter, honey, and vanilla until smooth.

  3. Pour the wet mixture into the dry ingredients and mix well.

  4. Fold in chocolate chips (if using).

  5. Roll into 1-inch balls and place on a parchment-lined tray.

  6. Refrigerate for 30 minutes or until firm.

  7. Store in an airtight container in the fridge for up to one week.

Notes

  • Use almond butter or sunflower seed butter as a peanut-free alternative.

  • Add flaxseed or chia for extra fiber and omega-3s.
