Ingredients

  • 6 large eggs

  • 1 cup full-fat cottage cheese

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup heavy cream (optional for extra richness)

  • 1/2 tsp garlic powder

  • 1/2 tsp sea salt

  • 1/4 tsp ground black pepper

  • 1/2 cup sautéed spinach or mushrooms (optional)

  • 1/4 cup cooked bacon or sausage (optional)

  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large mixing bowl, whisk the eggs until frothy.

  3. Stir in cottage cheese, cheddar cheese, heavy cream (if using), garlic powder, salt, and pepper.

  4. Fold in optional vegetables or meats.

  5. Pour mixture into a greased 8×8 or 9×9 inch baking dish.

  6. Bake uncovered for 30–35 minutes, or until center is set and top is golden.

  7. Let it cool for 5–10 minutes before slicing. Garnish with herbs and serve.

Notes

  • For a vegetarian version, omit the meat and double the veggies.
