A fun, no-bake frozen treat that combines crispy, chewy Rice Krispies layers with creamy ice cream—perfect for summer parties, birthdays, or anytime dessert cravings hit. Easy to customize and kid-friendly!
Ingredients
6 cups Rice Krispies cereal
4 cups mini marshmallows
3 tablespoons unsalted butter
1 teaspoon vanilla extract (optional)
1 quart ice cream (any flavor)
Parchment paper (for lining pan)
Non-stick spray (for pressing mixture)
Instructions
In a large saucepan, melt butter over low heat. Add marshmallows and stir until smooth. Mix in vanilla.
In a large bowl, combine marshmallow mixture with Rice Krispies cereal and mix thoroughly.
Line a 9×13 inch pan with parchment paper and spray with non-stick spray.
Press half the cereal mixture into the pan. Freeze for 15 minutes.
Spread softened ice cream evenly on top of the bottom layer.
Gently press the remaining Rice Krispies mixture over the ice cream.
Cover and freeze for at least 2 hours or until fully set.
Remove from freezer, slice into sandwiches, and serve immediately.
Notes
Use an offset spatula for even ice cream layering.
For added flair, roll sandwich edges in mini chocolate chips or sprinkles.
Make it vegan with coconut oil, vegan marshmallows, and plant-based ice cream.
Store in airtight containers for up to 1 month.
