4 fillets (6-ounce) Salmo
2 tablespoons Olive oil
4 cloves Garlic, minced
2 cups Cherry tomatoes, halved
4 cups Baby spinach
1/2 cup Heavy cream
1/2 cup Parmesan cheese, grated
1 teaspoon Dried Italian herbs
Salt and pepper to taste
1/4 cup Fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C)
  2. Pat the salmon fillets dry with paper towels and season with salt and pepper on both sides
  3. In a large oven-safe skillet, heat the olive oil over medium heat
  4. Add the minced garlic and sauté for about 30 seconds until fragrant
  5. Toss in the halved cherry tomatoes and cook for 2-3 minutes until they start to softe

  9. Transfer the skillet to the preheated oven and bake for 12-15 minutes, until the salmon is cooked to your liking
  10. Remove from the oven and garnish with fresh parsley before serving
