2 tbsp Rice Vinegar
1 tbsp Honey or Maple Syrup
1 tsp Sesame Oil
1/2 tsp Red Pepper Flakes (optional)
3 Green Onions, sliced (for garnish)
1-2 heads Lettuce Leaves (butter, bibb, or iceberg)
1/2 cup Shredded Carrots (for serving)
1/4 cup Chopped Peanuts (for garnish)

Instructions

  1. Carefully separate the lettuce leaves, rinse thoroughly under cold water, gently pat dry, and arrange on a platter for serving
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add chopped onion and cook for 3-4 minutes until softened. Stir in minced garlic and grated ginger, cooking for another minute until fragrant
  3. Add lean ground beef to the skillet, break apart, and cook until completely browned. Drain any excess grease
  4. Stir in chopped water chestnuts and cook for 1-2 minutes to warm through
  5. In a small bowl, whisk together soy sauce, rice vinegar, honey (or maple syrup), sesame oil, and red pepper flakes (if using)
  6. Pour the prepared sauce over the beef mixture in the skillet. Stir thoroughly, bring to a gentle simmer, and cook for 2-3 minutes until the sauce thickens slightly
