Instructions

  2. Place the cottage cheese in a blender or food processor and blend until completely smooth and creamy with no lumps
  3. In a large mixing bowl, combine the blended cottage cheese, granulated sugar, eggs, melted butter, and vanilla extract. Whisk until smooth
  4. In a separate medium bowl, whisk together the flour, cocoa powder, baking powder, and salt
  5. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Do not overmix
