1 medium Onion, diced
2 medium Carrots, diced
2 stalks Celery, diced
3 cloves Garlic, minced
1.5 cups Cooked chicken, shredded
1 can (15-ounce) Cannellini beans, rinsed and drained
6 cups Chicken broth, low sodium
1 Bay leaf
1 tsp Dried oregano
0.5 tsp Black pepper
1 tsp Salt
2 cups Fresh spinach
0.25 cup Fresh parsley, chopped
2 tbsp Plain Greek yogurt, for serving (optional)

Instructions

  1. Prepare your aromatics: Heat 1 tbsp olive oil in a large pot or Dutch oven over medium heat. Add diced onions, carrots, and celery, sautéing for 5-7 minutes until softened. Stir frequently
  2. Add garlic: Stir in minced garlic and cook for another minute until fragrant
  3. Introduce protein: Add the cooked chicken and rinsed cannellini beans to the pot, allowing them to warm slightly and absorb flavors
  4. Pour liquid base: Pour in the chicken broth, add the bay leaf and dried oregano. Bring the soup to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes to meld flavors
  5. Add remaining vegetables and season: During the last 5-10 minutes of cooking, add the fresh spinach until wilted. Season generously with salt and black pepper to taste. Stir in fresh parsley just before serving
