1 lb (450g) halal chicken breast, cubed
8 oz (225g) rotini pasta
2 cups low-sodium chicken broth (halal-certified)
1 cup water
1/2 cup nonfat Greek yogurt
1 cup shredded cheddar cheese
1 small onion, diced
3 cloves garlic, minced
1 tsp paprika
1 tsp garlic powder
3/4 tsp salt, black pepper
1 tbsp olive oil
Fresh parsley to finish
1. Heat olive oil in a large pot over medium-high. Season chicken with paprika, salt, and pepper. Sear 4-5 minutes until golden. Remove to a plate.
2. In the same pot, cook onion 3 minutes, add garlic 30 seconds.
3. Add broth and water, bring to a boil. Add rotini and return chicken. Cook uncovered 10-11 minutes (1 minute under package time), stirring occasionally.
4. Off heat, wait 60 seconds. Stir in Greek yogurt, then fold in cheddar until melted.
5. Finish with parsley and serve immediately from the pot.
Take the pot off heat before adding Greek yogurt — temperature shock causes curdling. Always cook pasta 1 minute under package time; residual heat finishes it perfectly. Leftovers: add 2-3 tbsp broth when reheating to loosen the sauce.
